Scientists and consumers are becoming more concerned about the relation between food and health.
One of Dr. Cornelia Kreplin’s responsibilities is to support research and innovation in the production of healthier food to prevent disease.
Dr. Kreplin is the Executive Director of Sustainable Production and Quality Food for Health at Alberta Innovates Bio Solutions.
DR. CORNELIA KREPLIN: Food and health is about looking at prevention of chronic diseases. It’s also about improving the healthful attributes of food and food ingredients. And there we can think about the levels of sugar, sodium, and unhealthy fats that we see in many processed foods today. So we would invest in things like improving the fibre content of lentils and beans, exploring the cholesterol lowering capabilities of barley. We would look at barley protein nanoparticles as a way to encapsulate other bioactives that would reduce cardio vascular disease or diabetes.
According to Dr. Cornelia Kreplin, some research partners include Alberta Health and the Alberta Livestock and Meat Agency.
